Details from Bailies Coffee
This is our second coffee produced in the Guji region, located in southern Ethiopia. It is known for some of the best quality natural coffees. However, in recent years more focus has been put on producing high quality washed coffees. Fertile soils, great microclimate and an interesting mix of heirloom varieties provide an exceptional end cup. Due to this focus on washed coffee, some of the best lots have been able to surpass that of the famous Yirgacheffe region.
Once the cherries are ripe, farmers collect them and bring them to their local washing station.The coffee is then weighed, quality assessed and the farmer is paid immediately. The washing station manager then separates the cherries by quality and the coffee is screened for any imperfections. Afterwards, the coffee is pulped on disk-pulper machines and left to ferment overnight.
The following day the coffee is washed in channels and cleaned with fresh running water. Clean parchment beans are then spread out onto raised drying beds where they are dried over 8-15 days. Once the beans are dried, they are loaded onto trucks and auctioned at Ethiopian Commodity Exchange. This is a selection of the top lots secured by our exporter Heleanna, transported to Addis and prepared for exportation.
